You said notable, right? If not necessarily admirable.
First off would be El Cid. Then the next who occurs to me is Torquemada, who was wholely detestable, but was very notable. Cesar Chavez. Isabella of Castille. Cristofor Columbus. Amerigo Vespucci--I know they were Italian, but to be strictly accurate, that would make them also Latino, since the term derives from the commonality of the language they speak, which derived from that spoken by the Roman Empire, also known as the Pax Romana.
Anyway,. if you expand the parameters to include all those who might actually qualify as Latinos, you get whole lots of possibilites.
