As the other answers said there are very few options for discounted tickets for a one day pass. The parks don't make their money from your admission, they make the most money from what people buy and do inside the parks. Food, souvenirs, etc. are all what is the biggest profit for them. So, they offer discounts for the extended passes so that you go to the parks more and/or stay at their resorts longer. So, you aren't going to be able to find any discounts for the parks for single day admission.
A one day pass for Disney World is: Adult $71.36 Child $59.64, this includes the tax, but is a base ticket. A two day pass is a very slight savings, and is Adult $140.58 Child $117.15, again including tax, but not hopping or anything. Since you are only going for one day, the hopping option probably won't be worth it for you. That costs $47.93 per person. Basically, it allows you to go to more than one park in a day. Otherwise, you have to stay at the same park, but come and go to that park as you please, that day. Unless you are planning to go to Animal Kingdom or MGM, which are smaller and don't take as much time, the amount of time you will spend traveling between parks will take a lot away from what you can get done. Therefore, I don't think I would spend the extra for the hopping. Now, for $53.25 you can add on the water park and more option. That would give you three visits, for either the one or two day pass, to the water parks, Disney Quest, Pleasure Island and Wide World of Sports. So, that may give you some more options, but save you money over getting another pass.
Disney doesn't offer as good of savings on their short passes, they offer the better prices on their longer passes and the two day pass really doesn't offer any savings. Therefore, Universal may offer you more savings. And, if you don't mind spending your two days at Universal, you will probably spend a lot less, they do have the two parks, so you wouldn't have to go to the same park both days. Universal offers a pass that gives you unlimited visits to Universal Studios, Islands of Adventure and City Walk for 7 consecutive days. The cost for that is $85.99, so that would run you a lot less than going to Disney twice, or going to Universal once and Disney once. That may be your better option. If that isn't what you are looking for, then their one days passes work like this: 2 parks for 1 day is $73 for adults and $63 for kids. 1 park for 1 day is $64 for adults and $52 for kids. You save about $4 per person buying them in advance, over at the gate, the other pass gives you a lot more savings buying them in advance.
If you buy your tickets in advance, you will save some money, with Universal, Disney also offers an advance purchase discount, but not on the shorter passes. You can print your tickets for Universal at home, for free, since you are going so soon. But, you can only print the Express Plus Pass and the 2 park 1 day admission ticket. The others, you can have them so that you pick them up when you get there, using an electronic kiosk. The only other option is to have it shipped Fedex, but that costs extra and you don't have enough time to get them.

I went to Disney twice last summer, one day each time. There are no deals. I searched everywhere. If you are staying longer, you get huge discounts for each day and each park. But for one day, you might as well just buy the tickets at the gate. I will warn you, you will see a lot of signs advertising free tickets. But this is in exchange for listening to a sales pitch for a resort, that lasts several hours. You don't want to lose that much time if you only have one day. We only went to the Magic Kingdom, and couldn't see it all in one day. It's worth the ticket cost though- Great place! Have fun!

Hate to be the bearer of bad news, but visiting Walt Disney World and Universal Studios for one day each is the least cost-effective. You can expect to pay $60 per one-day ticket for each adult at both WDW and Universal. You're not going to get any great deals just for one day -- WDW and Universal have cheaper tickets and package deals for people who intend to spend more than one day there.

If you can only do 1 day , you will have to pay gate price...which is $68+.
Don't forget that you will also have to pay $10 for parking if you are not staying on property
