I haven't been there before, and I'll probably only have one day +to sightsee, and we will probably have a baby with us.
What should be my top 2 priorities??

Yeah, Space Center Houston is great, but if you only have one day you won't probably get to make it to the Zoo. The Space Center is in the Clear Lake, so I would also suggest the Kemah boardwalk which is in the area. There's resturants, shopping, games, and rides. It's fun.
Or if you want to see the Downtown area, I would say the museum district. Usually one day a week there is free admission to all of them, I believe it's Tuesday. But yeah there's the Children's Museum, and The Natural Science Museum is great and has a butterfly exhibit that's real neat.
No matter when you go though, if you'll be outside - SUNSCREEN!
