Is the tank saltwater or freshwater?
It might be a sign of bad water quality or fish just often jump for no specific reason.

Sometimes this is a sign of bad water or not
enough proper lighting in the tank. On a not so serious side, you could train them if they are really jumping that high and make some money

I'm sorry to say but he may be sick. When my fish started to do this he died the next day. Mine also kept lying on the gravel too. So maybe your lucky and he thinks flipping is fun but he could be on his death bed.
