When temperature goes up the mercury expands but it cannot go any place but up, if you put a thermometer on the side it will go to the side. Reverse happens when the temperature drops.

When the temperature increases the mercury expands moving up the scaled tube.
The tube has a vacuum above the mercury allowing it to move up and down.
Because of the high surface tension mercury won't boil like water would.

The mercury absorbs the heat from our body and expands so it rises in thermometer
