Allow me to educate you here:
In an Exchange 2000. 2003 or 2007 environment as SysAdmin I can read whichever e-mail I want, within moments. On the network that I run I have an ISA firewall with some add-on software that allows me to re-construct ALL data passing though it. That includes Hotmail accounts IM conversations, etc.
As for the why part, because if any user send a maliscious e-mail the organisation may be sued. As a result our acceptable usage policy clearly states that no user has any rights to complete privacy on the network, and that we may without notice intercept any e-mail message.
Having said that, allow also to point out that I rarely read somebody else's e-mail. I have software that alerts me to certain key words and phrases in incoming & outgoing messages and those I will investigate. If my employers asked me to intercept any user's mail I will do that, too. Other than that I simply don't.
As SysAdmin I have over-riding rights on the network. Essentially this means I can read anything created, stored or transmitted on the network. I don't, because that would be immoral.
It is for exactly this reason that SysAdmins need to be absolutely trustworthy people and that trust often equates to higher wages.
Finally, remember and Admin's job is to protect firstly the data and functionality of the network, then privacy. Don't give your Admin reason to check your mail else he/she will, unless they're a fly-by-night type that doesn't have the skills to do a decent job.

No one can acces the private mails if it is and exchage server or an third party mail server hosted some where then there are chances that they can get the mails what ever you have send fro the system they can get only the last ten mails only

The short answer is yes. Your admin will either have direct access to anything you have, or can give themselves access to it. If you admin controls an email server, they can see every email you get, regardless of whether or not you delete it or not.

If your in work, on their network, they can look at anything you view. Be it websites, or outlook emails. If you have a private (nonn work) email your viewing via the web, they can still see what your looking at.

they can view work-related emails if you are using MS Outlook or Outlook express. Non-work related emails such as Hotmail, Yahoo, AOL etc... no they cannot.
The can view the web pages you visit if you do not clear out the history and cookies.

Not only your admin, but anyone running a sniffer on your network could see your email.

no one can read your mails until they have your password.e-mails are encrypted with long encryption keys and breaking it through hit and trial is impossible.just keep your password safe.
