Of course they do, haven't you ever seen a dog lying on the floor running after something?

Yes. Dogs in particular have been studied, focusing on the REM cycle using EEG studies (specifically, REM and narcolepsy and sleep apnea studies.) REM cycle sleep is usually observed by the layman in domestic animals and pets. What most people recognize is atonia and REM (when your pet is twitching, licking, making noises).
Here is a link to some basic info that refers to sleep studies using animals. If you need more info google "sleep studies animals"

I believe so. I once saw a documentary where they had (cruelly, in retrospect) taken a kitten and somehow suppressed that mechanism whereby mammals are paralysed when they sleep (don't ask me what it is or how they suppressed it).
The kitten, when asleep, "chased" invisible mice, presumably because it was dreaming of a chase.

We used to have to wake the Dog up when he was dreaming, he would twitch his legs and whimper, he seemed grateful for being woken. I cannot speak of any other animal just one Dog.

Of course they do. Dogs are famous for twitching their paws in sleep when they dream of chasing cats or rabbits. Didn't you know that?

Yeah...I think they do. My beagle Lexie barks, whimpers, growls and makes like she's chasing something (a rabbit, most likely - or the cat) all in her sleep!
