putting the head gasket on is simple, takes a few seconds. what takes a long time is the entire process of replacing a head gasket. before you can even take the old gasket off, you have to:
1. drain motor oil
2. drain coolant
3. remove radiator/fan
4. remove drive belts
5. remove water pump + thermostat
6. remove ignition coils + spark plugs
7. remove valve cover
8. remove camshafts
9. remove intake manifold + fuel injector rail
10. remove any cam timing units (e.g., VANOS)
11. remove exhaust manifold
12. then, you can remove the head
13. send the head to machine shop
now, throw on new head gasket.
then reverse the steps 12 through 1 backwards.
I don't know how long it takes a professional to do it, but if you're thinking DIY, I would take a weekend (possibly both sat and sun) to take the head apart. send the head out for maching during the week. then spend the following weekend (possibly both sat and sun) to re-assemble the engine top end. this assumes you have ALL the parts you will need. Also a good thing to have a helping hand or two.

a competent mechanic will tale around half a day... an hour to strip it out, and 3 hrs to rebuild it.. once they have had the head skimmed and got it back... if youre recuttingt he valve seats, add another hour.
average rates are around 50 quid an hour, plus vat...
