Download a Key logger. It will tell you all that went on on your keyboard. Keyboards can be FREE of on payment basis. Key loggers that are free would either work only for 15 days or 30 at best. Some may even prompt the users on a regular basis that their keystrokes are being recorded.
Finally its important to know that privacy of an individual is what you are compromising. So do not resort to it unless its absolutely essential.

Not really, depending on what was done. Hardware stuff? You wouldn't know unless they added or subtracted hardware.
Software...well, you could detect if they added or removed programs I suppose..and you can always right-click on files and view the last accessed information on a windows XP machine.
Doesn't sound like it's worth the bother unless you are paranoid, or have reason to be paranoid.

There are many legitimate spyware programs. You will want to look for one that runs invisibly. A very nice feature that many have takes a snapshot of the screen every few seconds.
Spectorsoft is one such company that provides said software.

There are others though, and they can be found with a simple internet search.

u can istall the Tracker software this will make a Log of all the work that's being done on computer...
The log is in a notepad file.. if you have a net connection with the computer then the log is automatically mailed to you once it reaches 200k

Nope.
If you don't trust them, why oh why are they even touching your pc?
If you want to undo most of it, you can 'refresh' Windows. Boot from the Windows CD and tell it to repair your install. It resets a lot to Windows defaults, not everything, but close.
