Coz it's a game about music. And guitar was the very tool to make every music have a colour. Like Rock and J-Pop have a different melody with the guitar. Also the game featured plenty well known music thats why the players are like it very much.

Because it allows those poor, untalented, idiotic people, to, for a hour, believe that they can play a guitar
