nVidia cards are renowned for their unmatched image quality when rendering 3d applications such as games and have long been the most popular among gamers.
ATI cards have captured and held the lead as an industry standard when it comes to video capture and display.
With the addition of SLI and Crossfire technologies, you won't likely go wrong no matter which card you decide on. Pretty much any high end rig out there will support dual video cards and has the jam to run them.
I've owned all three and swear by nVidia but it's a matter of personal preference.
Gaming or running 3d modelling applications? Go with nVidia.
Watching or making DVD, .avi or .mpg movies? Go with ATI.
Note: Matrox used to have a great product too and, though once quite promising, They dropped the ball several years ago and never really recovered their market share.

If you match up the cards you'll find they are both very good for a broad range of games. If you have a particular game in mind though, check out what they specifically developed on. Some game sites will list "optimum" cards although many others will also work. I've used both and while I like the ATI cards, I certainly would match up the card features and prices before selecting a new one.
