you should pick kare-kare since it has a lot of native vegetables and the unique thing about it is you have to eat it with "bagoong", a native fish paste. if you're looking for adventure and not the usual fare, this is more challenging that kaldereta ... although both are delicious!

I am married to a Filipina and she is getting sick of cooking caldereta for me. I could easily eat it 5 days a week I just love it.
Kare kare is also good but without the fish paste or bagoong.

kare kare because its delicious and if you don't want to eat the meat (or cant because of medical reasons) at least there are lots of vegetables that you can eat with the taste of karekare

Kare-kare bec. it's versatile. you can use purely meat or if you want the sticky fatty ones or seafood....and you can use a lot of greens! or just pour the sauce over white steamed rice!!! Yum!!!

I like caldereta too as my second choice.

both are good...

for those with foreign taste buds..

a kare-kare is a mixture of string beans, cabbage, meat (pork, beef) in peanut sauce... very spanish yet asian food a side dip is fishpaste.

caldereta is a spanish beef/pork/chicken (or any other meat you wish) in tomato sauce for extenders one can add potatoes, carrots... it can be spicy, sweet, a bit tanagy sour depends on the cook and region cooking it.

i go... BOTH! though i like kare kare better without the bagoong (only salt) and without the meat. only veggies.

i'm not vegetarian, i just like it that way.

Altho I also love kare-kare. Kaldereta is not too shabby either.
