I used to have a hobby of just taking pictures. I would snap a shot of a flower, or an old broken down windmill. I guess a cool looking mailbox would be cool every now and then. You can also play with the speeds on a camera if it's manual to give different effects to the picture.

Didn't you just describe photography? If you want to take it up as a hobby, pick something eccentric to take photos of and go from there. There's a guy up here that takes pictures of mushrooms -- beautiful pictures.

How about buildings? they are fantastic things, they come in all shapes and sizes, you will need to develop your photography skills quite extensively during the course of this hobby. And best of all, it gives you a perfect excuse to go to Barcelona, which probably has some of the finest architecture in the world, and photograph some of gaudi's work, including the sagrada familia which everybody really has to see.

Why don't you go to home depot and buy a mailbox (you could get one for $10) and then collage some of your favorite things onto it. You could also do like a love letter theme.
Then fill the box with notes and give it to someone you love.

There is a guy in my area that takes photos and digitally shrinks them. He leaves them stuck all over the place for people to find. I found 2 now. 1 at my old place of work and 1 on a bus shelter. You could do things like that...........it is good finding them.

Take pictures of unusual mailboxes, like the big fish, airmail ones up high, etc. Take pics of signs with names of your friends or family, like Welcome to Spencer, Joe's Bar and Grill, Jean's Jewels. Take pics of the business places in your town, and compare to new pics you take in the future. Some of the bldg's might be gone.
