Why don't you show them an episode of "Liberty's Kids" It's a great show (on FOX at 9am EST) for children about American independence. If you've never seen the show, there are a couple of episodes on YouTube.

EDIT: Just to add to the others' answers...#1. I don't know about the cabbage story, but the cherry tree story is a myth. #2. Originally, congress wanted to make Washington their new king. He refused, (said something like What good is it to fight to get out from under one king just to live under another?.) so they asked him to be president instead.
