you can't until they are full grown and then you have to take them to a vet and most have no clue what to look for and the ones that do will tell you that they won't check cause it could kill them...you won't know if you have female/male combo until you get eggs. Also, oscar's(a south american cichlid from the amazon river) are not fully mature and able to breed until they are about 4-5 YEARS old

Now for the real answer:

According to the link in my "source", you can't sex an oscar by dissecting or observing mating. You and "vent" them by looking at their sex organs (which is really hard to do) or you can observe the colours (males are slighly more colourful). Though this often depends on how the oscar has been treated (well treated female may be more colourful than a ill-treated male).

It's practically impossible unless you catch them breeding. Then the female have the more noticable breeding tube.
