I recently added eggs to my standard breakfast of whole grain bread with natural peanut butter and flaxseeds.

I workout pretty hard in the mid morning, so decided I needed the extra protein.

I like to buy cage-free natural brown eggs. I wisk two whole eggs plus one egg white and about a tsp of water. I add the smallest bit of ground sea salt and I scramble in a pan with just a touch of canola oil spray or butter flavored pam. When
I have the extra time I will sautee some red and green peppers in a pan and then add the egg mixture to that and scramble them all together. Then, I add a few tbsp of grated cheese (I use soycheese).

So many people are against eating the yolk because of the fat/cholesterol content BUT...

Egg yolks are one of the few foods that contain Vit D, and they also contain B12, riboflavin, and folate.

One egg is about 75 calories and one egg white is about 17.

Over medium, eggs and I are not the best of friends, I like them fine but they don't like me much.

Cooked! I'm not that particular. Eggs Benedict are good for an unhealthy treat.
