No, a mermaid is not human.

also called anthropophagy (from Greek anthropos "man" and phagein "to consume") is the act or practice of humans consuming other humans. In zoology, the term cannibalism is extended to refer to any species consuming members of its own kind.

no, they may half-shaped like human, but they aren't
do you want to live forever? as far as I know eating mermaid will grant you eternal youth and immortal life (japanese traditional belief)

well if u ate the upper half considering it's half human and half fish...and the top half is the human part.
