On mardi gras you do the opposite of fasting. Literally it means "fat tuesday," the day before Ash Wednesday, when Lenten fasting begins. People celebrated that Tuesday, knowing that the somber season of Lent would mean no festivities for 40 days. It's been a Christian tradition for hundreds of years. In France you eat crepes on mardi gras, with lots of butter!
