you will find about 10 links to the career pages of big name hotels. Some of these show their open vacancies, others give you the opportunity to send your CV directly to their HR department. You can also search the Caterer Global & Bin Eid database that show quite a few management jobs in Dubai.
I advice you to make a good CV and register with Bin Eid, CatererGlobal and Hotel Career. As you can read in this Gulf News article: http://archive.gulfnews.com/articles/07/02/03/10101484.html There are many new luxury hotels coming up the next years, you will then be notified when a matching job enters their database.

There are about two dozens of 5-starred hotels in Dubai of course the most luxurious is the Burj Al Arab.
