Does it have to do with rank, and if so, how is rank defined?

Nuns have to spend a period of time as a novice. That is they are learning what it is to be a nun but they haven't fully committed to it yet. When they graduate, they change to a new habit.

Also, the habit is different from calling to calling. The Sisters of Mercy (nurses and school teachers) wear a different habit than the Sisters of Charity (homeless work). Nuns in Africa wear a different habit than nuns in Asia. Some nuns wear regular street clothes. As long as they don't violate the rules of modesty, there can be quite a bit of variation.

Different cloisters. Some are Franciscan, some Dominican, Roman Catholic. Then they have "novices", usually in all white, and they make their way up the "ladder" with different head gear and robes...you get the picture.

Newer nuns, younger nuns, really, wear shorter dresses, and their headdress doesn't cover their entire head.
