That is a little early for the tourist season, but you should still find some things open. My first suggestion is that you go to one of the wineries. Santo wines: http://www.santowines.gr/index.html is particularily romantic for a nice dinner with views of the Caldera (many people have their weddings there) although I'm not 100% sure they are open that time of year.
It would also be nice to do the tour of the volcano with the hot springs and sunset in Oia (another very romantic idea). As for beaches, Kamari and Perissa are nice and the red beach near Akrotiri is a sight (although as other people have pointed out, it may be too cold to swim). Have a fun time just looking around the island and you can always do some shopping in Oia or Fira.
Oh, and on another note, the ruins at Akrotiri are currently closed due to a roof colapse the summer before last.
I hope you guys have tons of fun, and Congratulations!!

1. The beautiful town of Oia, especially in the sunset.
2. The excavation of the prehistoric town of Akrotiri (it is amazingly preserved after it was covered by the volcano, and it is considere to be lost Atlantis).
3. The island of the volcano, for a splendid view towards the main island and the chance to see sulfur and smoke coming out of the volcano.
4. some beaches (Kamari, Black beach, Red beach, Ammoudi under Oia, etc), although the sea will be too cold to swim.
5. Horse riding by the beach near Kamari
6. Byzantine church of episkopi in Mesa Gonia
7. Night life at Fira

The recommendations above (Oia, Akrotiri, etc) are correct. However, in the beginning of March it will be wet and empty and you will not have many choices as far as restaurants and bars are concerned. Hopefully, your hotel will be good with a spectacular view on the Kaldera! I wish you all the best.

i have worked at a santorini resort on 2004, so i have leaved there the whole season. I am so sad to inform you that the summer season in greece so not start earlier than may. Especially for Santorini, that is a windy island, going there in March is going to be the worst experience. It is my FAVOURITE island, as i met my fiance there, but please please do not go there almost in the middle of winter. Almost everything will be closed. Sorry...
