Osprey Publishing has a great series of books on castles. They are broken down by place and time period. They are part of their "Fortress" series.

Castle, by David Macaulay. Also, the video (PBS) by the same name is excellent. Both are in your public or school library, I'd guess. Online so many resources can be accessed just by typing "medieval" into your search engine.
