What is the largest currency appreciation in history? The increase in value can be gradual or overnight.

Do you mean with respect to the US Dollar?
Most of the cases I can think of were less a case of the other currency appreciating as the US dollar dropping.
In the late 1970's, the Swiss franc went from about US 40 cents in 1975 to about US 62 cents in 1979. Most other European currencies, especially the German mark, did very well also.
A better example would be the Japanese yen from 1985 to about 1992. The yen went from about 254 / US$1 to about 109 / US$1.
