Hops grows extremely fast. Sweet potatoe cut in half and put in a shallow dish of water grows fast and so do ordinary potatoes. Bamboo is supposed to grow a foot a day, but I don't know where you'd find it.

many plants grow very quickly. Ivy, dodder and bamboo spring to mind (sorry for the pun). Bamboo can grow a foot a day. Did you mean grow to maturity in six days? Many algae grow to maturity in six days eg Spirulina

I have a number of tropical plants and bamboo in my dorm room that can grow quickly, consistently, and noticeably within one week. I presume that climate and the progression of the seasons also has an impact on a plant's rate of growth.
