Well actually, when they created childs play, the were already in planning on creating the second one, so they saved about half of the chucky dolls from the store in the film, in case the needed a backup doll, for the "chucky stunts"

Props that are singular in nature (can't be used in other movies) are usually destroyed to prevent black market selling of them.
I know they did this with all the latex hobbit feet from the LOTR series.

the other answer is correct but in this instince i believe they would actually take all the packaged dolls and everything and action them...
