Very rarely does a guage mess give irratic temperatures. As wiith any problem that occurs with a vehicle there are several potetial problems.
First The sending unit that is mounted near the thermostat on the intake manifold could be malfunctioning due to corrosion buld up. It could be calcium deposits or rust to name just a couple of reasons.
Second; it could be the wires going to the temp sensor sending unit could be loose or corroded.
Third; your thermostat could be sticking
fourth; if you bought the vehicle second used the previous owner may have taken out the thermostat, that can cause irratic temperatures and hot spots in the engine causing serious damage long term, but will not cause no temp to be sent when the engine is warmed up.
The temp getting to 220 is not that big a deal if you have antifreeze in the water. Anifreeze also provides a higher boiling point. If the vehicle is boiling over you will smell it.
The easiest and cheapest thing to start with is checking the wiring to the sending unit and replace the sending unit.
If this does not fix the problem then replace the thermostat..
You should also make sure to test the antifreeze level (how cold it will protect to) Ideal is to protect to -30 deg F
Antifreeze also has lubricants in it to protect your water pump and prevent internal corrosion so make sure it is at the proper level.

I have an 87 350ci iroc and had a similar problem. They have a two stage fan set up on them and the relay block connectors were really not playing the game at all. I wired in a separate thermostat with a temp probe that i slid in to the top hose. Ever since I haven't had a problem. Be carful running that block to hot, they are cast iron heads that are hardy but they are not indestructible and you dont want to be frying any head gaskets.

Could be one of three things. 1. Your heat sensor in the engine may need replacement... 2. Your meter on the dash may need replacement.. or 3. You may have a bad water pump.
Take your car to a mechanic and let him know about the high temp readings you have been getting.

Before you do this, make sure your vehicle has sat with the engine off for at least 8 hours (like overnight).
Because, have you checked the coolant level?
That would be my first logical choice.

it's your tempature gauge that you should be worrying about because if something real does happen and you don't know about it than you have a problem.
