Roaring River State Park in Missouri is a wonderful park. Hiking, camping, horseback riding, trout fishing, and swimming are just a few of the things that are offered. It is a beautiful setting in a valley. We go there every year. We also tried Bennett Springs State Park, but we didn't care for it nearly as much. We tent camp and cook our meals out over the fire pit. The food is great, and we usually make s'mores in the evening. We have stayed in the cabins, but we really like to rough it in the tent.

I have stayed in many of them over the years.
One of the best (and biggest) in Oregon is Fort Stevens, outside Astoria. Lots of activities, including beach access. There are a lot of really good state parks in both Oregon and Washington (the two states I have stayed in them most), especially along the coastline.
I have tent camped, and camped in an RV. I also love the "Yurts" available in many of the WA/OR state parks, they are a great deal, esp for camping in inclement weather.
We always take our bicycles, and bike around the local areas as well as the campground. We also take cameras and binoculars to watch wildlife.
