I've never heard of 3 stages of weaning.

I do know that weaning technically begins WHENEVER you introduce something that is non-breastmilk. Weaning can take a long, long time after that of course, especially if the child's natural needs are respected.

No idea what 3 stages are.

Babies should be given only milk, preferably breastfed, until 26 weeks.

Then introduce solid foods. You can go the traditional purees route, but have you thought about Baby Led Weaning? It skips purees all together, and you start with finger foods. It really is great. The research was done by the deputy director of the UNICEF baby friendly initative, Gill Rapley.

This was my babys plan:
0-5 months exlusive breastfeeding

5-6 months 1 meal a day of pureed veg, still same amount of breastfeeding

6-7 months 2 meals a day of pureed veg, cereals, pasta, rice etc(all mashed), 4 breastfeeds a day

7-8 months - 3 meals a day as above, 4 breastfeeds

8-10 months - 3 meals a day, introducing foods that we eat such as bolognese, stir fry etc mashed., 3 breastfeeds

10 - 12 months - eating whatever we eat pretty much as it is, just chopped up. 2 breastfeeds a day

12 months plus - 3 meals a day normal food, 2 snacks such as fruit or cheese, 1 cup of milk a day

0-6 mths exclusive breastfeeding
6-9 mths gradual introduction of solid food

18-22 college
