For me, it would have to be the picture from the Cassini probe that it took of Saturn while it was in its shadow. The backlit rings are gorgeous, and the small blue dot of Earth is even visible in the picture.

To me, the most interesting image from outer space is the Mice galaxies. This is the merging of two galaxies which cause a long tail to come from one of the galaxies, hence the name "Mice." Click on the following for a links to see pictures of this oddity:

I have a great website its called Astronomy Picture of the Day. It gives you a great photo and a short description every day.
