Since you seem to observe your girlfriend's eye color shift during specific mood shifts, it could be that her eyecolor is influenced by genes associated with specific neurochemicals, hormones, or other metabolic processes that occur when she enters a hightened or stressed state.

My eyes do the same. My only guess is that when I'm upset or worried the veins in my eyes are more red, making a sharper contrast with my green(ish) eyes. This makes sense to me because my eyes also appear more green when I have allergies.

Your girlfriend eye are natural green in color. there is no where in science is person change their eye color
