It is the day before Lent begins. People would confess their sins on Shrove Tuesday (they would be shriven) and then on Ash Wednesday, the first day of lent, they would go to church and have ashes put on their heads as a symbol of their sins and their sorrow for them.
The pancakes are to use up the fat and rich food in the house, before the fsating through the days of Lent. In Brazil it's called Mardi Gras (Fat Tuesday)
