I've wondered that too. Belle calls him "Beast" throughout the movie but he's no longer a beast when he's transformed back into the prince and he never lets anyone know his name after the transformation so what's his name?!? Maybe it's in the credits at the end of the movie, or on imdb.com.
EDIT: I looked it up on imdb.com and under "trivia" is says:
The Beast/Prince's real name is never mentioned. According to the Official Encyclopedia of Disney by Dave Smith, the Beast's name is "Adam".

In the Disney version it's Prince, never referred to by name. In the TV version it's Adam.

Adam, but on the DVD commentary of the Special Edition, the film makers also threw out the names "Tyrone" and "Steve".

He's just prince. He's exposure as a prince is so short that they didn't bother to name him (Disney cartoon).
