Several Drills can help:
1. Have some one kneel beside you and toss either marshmallows or practice golf balls to hit, after doing this a baseball will look like a beach ball.
2. Get a plunger and stick it into a batting tee, then use that to set up a basketball to hit. This will teach you to power through the ball and follow through, not only will it increase your hitting power but will help you adjust to the weight of a heavier bat.
3. Have a bucket with different colour balls in it and have a pitcher pitch them to you and say a colour as he/she's throwing it, if the colour they say doesn't match the colour of the ball you don't swing, this will improve your reaction time and eye hand co-ordination.
When you're at the plate, focus on the logo on the pitchers hat and then focus on centrefield and then on the logo again before he pitches, this will prepare your eyes to adjust to the ball.
Finally I would suggest you get an instructional video to help make sure your mechanics are good, a very good but simple one is called how to hit and run, I got it free when I bought a hit-away swing trainer which only cost about $20.

Tommy Guard 3 gave you some very useful ideas for improving your hand-eye coordination for batting; I have previously used many of those same strategies with my players as well, and they are all good. Also, one could use soft toss but don't toss the ball too softly ;-) , and the game of pepper where they actually throw the ball instead of merely toss it. It can become quite competitive, if you play it correctly. If you miss the ball that they try to zing by you, you go to the end of the line. Simply start out tossing the ball, then increasing the speed as you all improve. It truly helps improve hand eye coordination if it is done well.
As far as fielding is concerned, find a brick wall with a substantial surface on it like the side of a school building or house that has a smooth, good-sized surface of grass, dirt, cement, or even pavement in front of it where you can roam. Hopefully, there will be nothing behind you that you can damage like windows, little brothers and sisters, your Aunt Agnes' car, etc. Standing a decent distance away from the wall with your trusty baseball glove firmly on your hand, bounce a GOLFBALL off the wall, then field it OVER, AND OVER, AND OVER, moving yourself right to left, left to right, nearer to the wall, farther away from the wall, etc.
I did this little exercise seemingly forever when I was a kid and, because I honestly loved to do it so did it a lot, really improved my fielding skills and hand-eye coordination! The strengths to this activity are simple: you don't need anyone else, you can do it as long as you want, and you can make a game of it if you use your imagination. The idea is to learn to field the ball more consistently and CLEANLY, and you will soon become the best fielder on your team with FANTASTIC hand-eye coordination! (Yeah, you can do this with someone else like a handball game, but make rules that you have to bounce the ball so the person has a REALISTIC chance of fielding it! :-)

I like throwing tennis balls against a wall I usually start further back and dont throw them to far then work my way up and try to get about 10 feet away and throw them pretty hard and catch them. Another thing the helps cordination and reaction is to stand 15 in front of a wall and have some one 5 feet behind you throw a ball at the wall and you catch this makes it to where you can't cheat and start moving to the ball ahead of time this will also help your foot work. Make sure you do this all bare handed this will make you have better cordination and it will give you better hands

If you ask me its genetics so you might be able to help hand eye minimally but not enough to have a noticeable difference.

pinball(I felt this worked really well), tennis, some computer video games, throwing a tennis ball against the wall and catching it, batting cages, playing cage.
The more practice the better ofcourse : )
