For best PVP results you want to select a healer so then when the other player think the fight is over you show that the fight is just beggining. However, you also want someone that can deal and take hits. Joining those two whoo do you get? A Paladin. That works even better when you are playing undead since pallys have great holly damage against undead.

In any competitive game where there are different classes or things, it's the skill of the player that matters more than the weapon and/or being.

Try Shadow priest. Race doesn't matter.
