I bought a shop sample wedding dress and signed a contract which said all sales are final and once gown is ordered i cannot cancel. The gown was never ordered because it was already in the shop. I paid £500 for the dress and £350 for alterations. Can i get my money back on the alterations (it hasn't been altered yet) or exchange the sample dress for another dress in store?

You should be able to get the money back for the alterations since the work hasn't been done yet. As far as exchanging the dress goes, it would depend on the store. You would have to ask the store manager if they would allow that for a similarlly priced dress. It's really up to their discretion

They mean once it has been ordered by the customer, whether or not it was in the shop is irrelevant. If you have paid for the alterations and they are in the process of being done then you can't just change your mind - only if the alterations aren't right can you complain. I don't know the shop's policy about changing your mind for another dress.

yes on the alterations as they have not been undertaken

depends how long between ordering the dress and asking to cancel

you should be able to get a credit note although in such a specialised shop that may not be too useful

not the classiest move but wait till they have more customers in and go in complaining loudly about how you have been ripped off, she is ruining the best day of your life blah blah if you are causing them more business they may be more keen to help just to shut you up

it is still ordered - as is anything you wait to be delivered.
