I saw people doing this recently at my workplace and was floored. I would not even consider them - to me it's equivalent to picking your nose in an interview - you just don't do it.

You are absolutely right. It is annoying and shows a lack of common sense. I was interviewing recently and a girl came into my office with a large coke from a fast food chain. She proceeded to sip the coke and set the cup on my desk during the interview....I couldn't believe my eyes...

You are right, gum chewing is extremely rude. Many people don't think that it is a big deal but it is. During an interview, you are trying to make a good first impression, is "rude" the way you wish to come over? There are some people that read your facial expressions, body language and muscles in the face as an indicator of honesty similar to a lie detector. Chewing gum makes the interviewer uneasy and nervous about your honesty. You never have another chance to make a good first impression.

It would definately be points against you... however, qualifications and charisma may over ride fallacies in some instances.
