I know tha DNA can with special mechanisms like histones. Could RNA undergo a similar process?

Can it? I suppose it's possible with the right modifications. Does it? No, not really. RNA is not present in the lengths and amounts necessary for supercoiling. RNA does form secondary structures however and also forms complexes with proteins to give it compact shape at times, but no supercoiling.

Depends..for example some viruses such as the HIV does not have DNA but only RNA... here there are some packedgind machanisms such as coilind and neucleosomes and histisomes to form something like a chromosome...but at the same time these viruses do not have as much information..only that required to produce proteins,
