Mexican are as American as people of the US. In spain we calle people from the USA "estadounidenses" America is a continent and from the south to the north you are all Americans to me.

I agree...I remember when I lived in Colombia, they all considered themselves Americans as well. But the rest of the world doesn't even consider South America when someone says that they are American.
Well, I guess it is as so because all other countries in America have a good word to express where they are from: Mexico=Mexican, Canada=Canadian, Colombia=Colombian, Brazil=Brazilian....but for United States...it just doesn't sound right to say "I'm United Statesian"...they picked a Name that doesn't work this way and so had to resort to using "American." It is not United America, but the United States OF America, meanimg that the US is only A PART of America, thus it technically is not correct to say that all Americans are all from the US. It is the same concept as: an Italian is also a European...So a Colombian is also an American. But anyway, everyone knows that referring to an American means a person from the US.

I think you mean why do people from the USA refers to themselves as Americans as Canadians certainly don't!
Short answer - because most Americans think the world revolves around them LOL no perhaps it is because "USAtian" or USAdian" would sound so dumb.
The only nationality that can truly claim a continental name is Australian.
Technically the Americas are all of North, Central and South America so Americans would actually include all these people.

Americans are people from the US. Canada and Mexico are in North America also, but they are Canadians or Mexicans, not Americans.
There's nothing arrogant about it, that's just the way it is.

Because our name is the United States of America. So we use the American part of USA to say what country we are from. Other countries have there own names such as Canadians or Mexicans that they use. What else are we suppose to call ourselves. America is part of our name so that is what we go by.
