what do you call that kind of technique(other than strumming) in guitar when you pluck one string--is it alternate picking?

it can be called alternate or tremolo picking.

Depends whether you use your finger, a finger pick or a flat pick.
If you use your finger it's called finger picking, flat pick is called flat picking. I'm not sure about using a finger pick. And it doesn't matter whether you are playing acoustic or electric.
As a general rule though, acoustics are more commonly finger picked and electrics are more flat picked with notable exceptions.

not exactly got a name as such, but yeah alternate picking is one way. tremelo picking is the consistent picking of the same string.

alternate picking is when you move the pick up and down so that every other note you play is a down stroke and the others are upstrokes.

Yeah, alternate picking.

You would play something like this:

E----------------------------000-----------------------------
B-----------------------000----------------------------------
G-----------------000----------------------------------------
D------------000---------------------------------------------
A-------000--------------------------------------------------------
E--000-------------------------------------------------------------

By using continuous up and down strokes using your pick.

That's alternate picking.
