It literally means Fat Tuesday. It's a great day for me, because I love Lent and the solemn wait for Easter. I love the holy days of the Triduum and look forward to their coming.
Mardi Gras means one last splurge before fasting and abstience. Eat well today and sacrifice tomorrow.

Ah Father....It means the forty day hangover approaches. It means crawfish, crabs, and shrimp, and not just on Fridays. It means ashes on our foreheads, and nobody tells you to wipe them off. Soon we will be remembering the sacrifice of the Lamb. That's what Mardi Gras means to me.....Oh Yea...I should take down the Christmas tree now.

It means Fat Tuesday. When people used to fast during the 40 days of Lent, you used up all sorts of food on the Tuesday before Ash Wednesday. - Hence pancakes.

I don't like it ,It just seams wrong to me ,the way some bring in The New Year on New Years Eve is the same way they bring in and welcome our Spring season. Drunk, mindless , no thought except for their own good time and down with any thing religious .
They will spend more money on floats and beer joints ,while people are still home less down there .

Misty said it really nicely.
It really means little to me. Today is pancake day, rather.
