Between Medium Rare to Medium. 135 to 140 degrees. Prefer NY Strip Steak, but T-Bone and Porterhouse are acceptable. I like the Strip Steak at Outback. The do it right and they are not too expensive.

Medium rare. I wonder how many people know that a T-bone steak is New York (striploin) on the big side, and Filet Mignon (tenderloin) on the small side.
