Because they are just small to medium size rocks. They are not large enough for gravity to shape them into spheres, like the Moon etc.

Meteors are indeed the matter that got "blasted out" and continues to get pummeled by space debris and each other. Since they have no atmosphere, there is no protection against getting hit. And unlike the Earth whose surface is constantly altered by weathering and erosion, meteor surfaces are only affected by collisions. Their irregular shape testifies to the violence of their formation and existence.
