I understood that he didn't want to be King Charles, due to the...unfortunate circumstances of the previous Kings named Charles, and that he would take one of his plentiful middle names as King. Anyone know for sure?

Apparently he intends to be called King George VII, using one of his middle names and harking back to his grandfather, who was a better king than Charles I or II.

He'll probably have the title of His Majesty King Charles III. Surely no-one will lop off his head. I guess he could use one of his other names Phillip, Arthur or George. Then he could be King Arthur.

When (if) he becomes King, I would expect politely he would be called "Your Majesty" or "His Majesty".

As for what "name" he will be known by; probably that will be one of his first decisions as King. Like back in 1952 when the new Queen was asked "by what name will you be known".
