assuming I have the same volume of each, which would be lighter?

what do you mean by lighter?
1kg of starch and 1kg of fat. Which is lighter? They both weigh the same.

As in less dense?
Fat is less dense.

Or less calories per g?
This will be starch

All edible fats have densities of less than 1 g/cm³, whereas the density of starch is greater than 1 g/cm³. (I can't remember what the actual value is - I haven't got my data book with me.)

So a given volume of fat will be LIGHTER than the same volume of starch.
