Yes. Only when the ball hits the ground is it not ruled an out. This is an excerpt from a set of rules I found:
Caught:
If a fielder catches the ball on the full after the batsman has hit it with his bat. However, if the fielder catches the ball, but either during the catch or immediately after wards touches or steps over the boundary, then the batsman scores six runs and is not out.

As long as the ball is caught by the fielder before the ball touches the ground irrespective whether it is bounced from the hat of any part of the body of the fielder, the batsman is out. The main criteria for giving batsman out is that the ball should be caught before the ball touches the ground.

yes a batsman is given out in that case, example 2001, border gavaskar trophy tendulkar batting on 126 hits an on drive hits langers shoulder and ponting catches it. tendulkar c ponting b gillsespie 126. another interesting one happened in 2006 vb series in australia. andrew symonds hit a rocket straight at his non striker who was michael clarke, clarke trying to avoid getting hit got his bat in his way, ball hit his bat and went up in the air for short mid wicket to catch it. symonds gone in a very unlucky fashion. symonds as he left the field said to clarke jokingly, "you owe me a beer".

yes he is it is only ruled out if the ball bounces before it hits their cap/head or the ground afterwards.
