Rap is anything where the words are spoken rhythmically rather than truly sung. Hip-Hop refers to a culture and a style of music, largely urban. As far as the Grammys go, however, I think Hip-Hop refers to songs that are partially rap, partially sung.

I THINK... hip hop has a tune and a melody of sorts, where as rap is just kind of talking, to a beat, but not really a melody.

Originally Hip-Hop music developed containing essentially three ingredients: Breaks, Beats and Scratches.
Rap can be roughly defined as words spoken rhythmically. In modern days it can be added that these words are spoken over a beat.

Rap is talking by the beat. R&B (Rythm and Blues) is more a style of music that can involve rap, but not necessarily...like Beyonce, Ashanti, Jodeci, Shai...but also Puff Daddy, Wu Tang Clan fit under this category.
