The Europeans didn't settle Texas. It was habitated originally by natives and then some native-Spanish mix breeds, but ultimately, it was settled by Americans who swore allegiance to Mexico in the 1820s. Texas was vast and had fertile soil good for farming, so that would be the economic motivation for settling Texas.
