because Beauty is the quality that gives pleasure to the mind or senses and is associated with such properties as harmony of form or color, excellence of artistry, truthfulness, and originality, so in a way encircles every feeling.

Natural Beauty does it for me. There is nothing more beautiful than a woman who needs no make up to look her best. Oh, and don't even get me started on the outdoors: mountain waterfalls crashing down into crystal clear lakes. And the beauty of the night sky; the arms of the Milky Way, planets dancing, northern lights, and shooting stars. Forget all the fake stuff, natural beauty is priceless.

We have complex minds. Life is a mad jumble of survival and longing. Daily we are plagued by confusion and doubt. Sometimes life seems aimless, maybe even pointless. But now and then you notice something that seems to be the opposite of the chaos of your life: a rose in full bloom, the movement of water, the clouds at sunset. These patterns that occur in nature effortlessly and seamlessly display a sense of innate purpose where we have none. I think this is what we recognise as beauty and I think we are fascinated by it because it is a symbol of what we are each trying to attain: order in the chaos.
This together with the timeless words of Kahlil Gibran:
"Beauty is eternity gazing at itself in a mirror.
But you are eternity and you are the mirror."

Because if life isn't beautiful what would be the point, really? But if the physical beauty of a person is what your talking about, it is because we don't actually know real beauty. We don't go that far and are quite content with our own shallowness.

In each other, beautiful typically means healthy. If we were innately attracted to unhealthy/ugly our species would spiral into non-existence. Instead we have an innate attraction to beauty/health and the species tends to grow stronger and better able to survive.
As to natural beauty, that may be harder to figure. But perhaps more beautiful means lusher, more fertile land, or forests with more game (for our ancient relatives to hunt). Unhealthy places are very often unpleasant and disgusting in one way or other.

key words in your question: "fascinat(ion)" and "beauty". both relative. but to give my two cents' to the simplest implication of the question, we're fascinated by beauty because it's natural. we gravitate toward something/someone that appeals to our senses.
