I'm not sure what age range you are talking about so i did a couple:
Elementary:
pumpkin patch field trip - they get to pick pumpkins and you can learn about how to grow things and how to respect nature and what to do with the pumpkin
bug catching field trip - teach what bugs are safe and what aren't (bees aren't), usually when this is done kids put them in a jar that has this stink stuff that kills the bugs then you take them back to the classroom and they stick them with pins to styrofoam and they have to label them
nature walks are always fun too, its hiking and learning about nature
Middle or High School:
A more advanced nature walk field trip
Career field trip where they go learn about a career
Trip to museum or other learning centers

In my school many of the disadvantaged kids go on all field trip such as the Discovery Musuem in towntown San Jose and the Monteray Bay Aquarium and also a good place would be IMAX theater!

I wanted to take my students to the Underground Railroad Museum in Cincinnati, Ohio while we were reading Frederick Douglass' autobiography. There's also the tie-in of Harriet Beecher Stowe and Uncle Tom's Cabin to Cincinnati, so I wanted to make it an all day event and visit the most significant literary spots and socially significant spots in the area. Principal said we couldn't do it because of the busing situation.

museum of natural history, many lesson plans and follow up projects. Indians a chart, report or paper board project on telling class of who they were, how they lived, what they did, what they ate and wore? For older you can split up groups. One to the space part and have them put a whole report and project together on what they know, learned, seen, facts and all. Different groups to different sections, dinosaurs, african american, darwin, marine life and so on. Pick specific animals for each and have them research them.
Jewish museum have students visit and write something atleast one sentnce on each section they visited, at the end they are to give a one pgae on what was the most important or interesting section they visited, what was it and what did it mean to them?
Radio and television they can pick a couple of shows they want to see and work on reviews, how many thumbs up, good or bad review and why? What was it on, about, focus for what time was it meant for. maybe put them in groups of three and each one have to make up a review that means even if they see more shows they still have to hand in one each.
planetarium = give each group a planet
poster project, picture, description, facts, temperature, life or no life, why and so on.
Career trip. maybe you want to take them to a certain place where they can interview people maybe work in groups of two.
Questions of there job, what they needed to get there, highlights, strengths needed, school and so on.
motiong and Moving images in corona queens, report on trip taken.
Take them to china town to eat and spend some time walking around since chinese new years just past. have them speak infront of class on things they seen, the heritage, culture and so on.
