im watching a documentary about the building of the subway in manhatten, new york. They mention how the land was so hilly and uneven. Is it true that manhatten was flattened at some point?

Yes. A lot was dynamited when the street grid was built out and the formerly independent towns/villages connected. I think this was in the latter part of the 19th Century.
